CabbageA generation of children once believed that dolls come out of a cabbage plant. Others associate it solely with German dishes. Whatever its reputation this vegetable is not what it used to be. The red variety (Mammoth Red Rock) like is the most popular for salads but the green variety like Danish Ballhead is still most popular for sauerkraut and coleslaw and the savoy cabbage (Savoy Perfection) with its mild taste is a key ingredient in minestrone soup. Cabbage is a cool weather plant and seeds are best planted in a seedling bed or indoors in seedling trays 8-10 weeks before the last frost. Like their close relatives brussel sprouts, cabbage shouldn’t be planted in the place they are meant to mature. They need to be transplanted in the course of their growth to encourage a good root system. Cabbage grows best in a fertile firm soil, so amend the soil with compost and firm the soil around the plant when transplanting. Water evenly as uneven watering can lead to split heads. Also to reduce the risk of soil borne disease rotate any cole crop such as broccoli, cauliflower, cabbage and brussel sprouts on a three year rotation with other crops. Beans and peas are good crops to rotate with cabbage as they will increase the fertility of the soil.
