Hot peppers are categorized by the amount of capsaicin in the pepper known as the Scoville Organoleptic scale, the higher the score the hotter the pepper. For example Anahiem peppers have a score of 200 while Jalapeños are scored at 4,000, Serrano has a score of 8,000, Cayanne peppers are 30,000, Thai peppers have a score of 80,000 and Habaneros are some of the hottest at a score of 200,000. The hottest part of the pepper is the seeds.
Hot peppers like bell peppers and tomatoes need to be started indoors 6-8 weeks prior to the last frost. They benefit from bottom heat from a seedling warming mat which will aid in germination. A warmer ambient temperature help the new plants grow. Because they like it hot, after hardening the plants off transplant peppers outside when the risk of frost has past and even a few days after that. Despite this peppers need moist soil so mulch around the base of the plant to help retain moisture and discourage weeds. Peppers can cross pollinate so if you plan to keep seeds plant the different varieties some distance from each other. It won’t affect this years crop but the crop that results from the seeds collected.
